01 - 1 lb beef sirloin or flank steak, thinly sliced
02 - 2 tbsp olive oil

07 - 2 medium sweet potatoes, peeled and cut into 3/4-inch cubes

12 - 1/4 small red onion, thinly sliced

→ Dressing

13 - 3 tbsp plain Greek yogurt

# Directions:

01 - Preheat the oven to 425°F. Toss sweet potato cubes with 1 tbsp olive oil and a pinch of salt and pepper. Spread evenly on a baking sheet and roast for 25 to 30 minutes, turning halfway through, until golden and tender.
02 - In a bowl, combine the sliced beef with 2 tbsp olive oil, smoked paprika, garlic powder, kosher salt, and black pepper. Mix thoroughly to coat the meat evenly.
03 - Heat a large skillet over high heat. Sear the beef in batches for 2 to 3 minutes per side until just cooked through. Remove from heat and keep warm.
