# Directions:
01 - Combine apple cider vinegar, water, sugar, and salt in a small bowl. Stir until sugar and salt are dissolved. Add the thinly sliced red onion and toss to coat. Allow to steep for at least 10 minutes.
02 - Toast the slices of bread to your desired level of crispness using a toaster.
03 - Halve the ripe avocado, remove the pit, and scoop the flesh into a separate bowl. Incorporate lemon juice, salt, and freshly ground black pepper. Mash until it reaches a desired consistency, allowing some texture if preferred.
04 - Evenly distribute the mashed avocado onto each slice of toasted bread.
05 - Generously top each avocado-covered toast with drained pickled onions. Sprinkle with everything bagel seasoning.
