16 - 8 whole wheat slider buns
17 - 1 small tomato, sliced
18 - 1 small cucumber, sliced
19 - 2 oz baby spinach or lettuce leaves
20 - 8 thin slices red onion
# Directions:
01 - Set the oven to 400°F. Line a baking sheet with parchment paper.
02 - In a large bowl, combine ground chicken, chopped onion, minced garlic, beaten egg, whole wheat breadcrumbs, Dijon mustard, chopped parsley, smoked paprika, salt, and black pepper. Stir gently until just blended.
03 - Divide the mixture into eight equal portions and shape each into a small patty.
04 - Arrange the patties on the prepared baking sheet. Bake for 18 to 20 minutes, flipping halfway through, until golden and an internal temperature of 165°F is reached.
05 - While patties bake, combine Greek yogurt, lemon juice, chopped dill or parsley, garlic powder, salt, and pepper in a small bowl. Mix well.
06 - Optionally, lightly toast the whole wheat slider buns for added texture.
07 - Spread a layer of yogurt sauce on the bottom half of each bun. Place a chicken patty on top, then layer with tomato slices, cucumber slices, baby spinach or lettuce, and red onion slices. Add more sauce if preferred. Cover with the top bun.
08 - Serve the sliders immediately while warm.
