- Black pepper: 1/4 tsp

Instructions
- Prepare marinade:
- In a large bowl, whisk together olive oil, Dijon mustard, balsamic vinegar, garlic powder, thyme, oregano, smoked paprika, salt, and pepper.

- Add 1/4 cup water to the bottom of the pot. Transfer the coated mixture to the pot. Seal and cook on Manual high pressure for 10 minutes. Quick release, then switch to Sauté for 3 5 minutes to reduce liquid, if desired.
- Air Fryer method:
- Preheat to 375°F (190°C). Arrange the coated chicken and vegetables in the basket in a single layer. Air fry for 18 20 minutes, shaking halfway, until chicken is cooked through and vegetables are tender.
- Serve:
- Serve hot, garnished with chopped parsley and lemon wedges.
