01 - 4 cups filtered water
02 - 1/4 cup organic cane sugar
03 - 2 tablespoons water kefir grains or 2 tablespoons ginger bug
04 - 1/4 cup fresh lemon juice
→ Flavoring
05 - 1/2 cup fresh orange juice
06 - 1/2 cup fresh lime juice
07 - 8 fresh mint leaves
08 - 4 thin orange slices, for garnish
09 - Ice cubes, to serve
# Directions:
01 - Dissolve organic cane sugar in filtered water within a clean large glass jar. Add water kefir grains or ginger bug and fresh lemon juice. Stir gently using a non-metallic spoon.
02 - Cover the jar with a breathable cloth or coffee filter secured by a rubber band. Allow to ferment at room temperature (68–77°F) for 24–48 hours until lightly fizzing and tangy.
03 - Using a fine mesh strainer, remove water kefir grains or ginger bug and set aside for reuse or discard.
04 - In a pitcher, combine the freshly fermented soda base with orange juice, lime juice, and mint leaves. Stir carefully till mixed.
05 - Fill glasses with ice cubes. Pour the mocktail mixture over ice, garnish with orange slices and additional mint if desired, and serve immediately to preserve carbonation.
