# Directions:
01 - Set oven temperature to 425°F. Line a baking sheet with parchment paper to prevent sticking.
02 - Wash squash thoroughly, trim ends, then slice into 1/2-inch thick rings. Remove seeds from each ring using a spoon.
03 - In a large bowl, combine squash rings with olive oil, maple syrup, sea salt, black pepper, and cinnamon. Toss to ensure even coating.
04 - Place coated squash rings in a single layer on the prepared baking sheet.
05 - Roast in the oven for 20 to 25 minutes, flipping rings halfway through, until golden and tender.
06 - Transfer roasted squash to a serving platter. Immediately sprinkle with chopped pistachios and parsley if desired. Serve warm.
