01 - 1 lb large shrimp, peeled and deveined

12 - 3 tbsp unsalted butter, melted

# Directions:

01 - Preheat the oven to 425°F. Line a large baking sheet with parchment paper or foil.
02 - In a large bowl, toss the baby potatoes and sweet corn with 1 tablespoon olive oil, 1/2 tablespoon Cajun seasoning, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Spread evenly on the baking sheet.
03 - Roast the potatoes and corn in the oven for 15 minutes.
04 - While vegetables roast, combine shrimp, sliced red bell pepper, remaining 1 tablespoon olive oil, 1 1/2 tablespoons Cajun seasoning, smoked paprika, garlic powder, and onion powder in the mixing bowl. Toss until evenly coated.
05 - Remove baking sheet from oven and add the shrimp and bell pepper mixture. Drizzle melted butter evenly over all ingredients.
06 - Return the baking sheet to the oven and roast for an additional 10 minutes, or until shrimp turn pink and potatoes are tender when pierced with a fork.
07 - Sprinkle with chopped fresh parsley and serve immediately accompanied by lemon wedges.
